This change needed to be made because “me” in this sentence was used in the object form when it should’ve been used in the subject form (“i” is the subject form). Another way to look at it: if you can say “I” without the other person included in the sentence, then it’s “my mom and I”. In this sentence, you can say “I like to watch The Masked Singer” and it would still make sense. On the other hand, if you were to say “Me like to watch The Masked Singer” it would still make sense but it would just be less clear, which is why you use “I”.
