It does it by converting the lactose into its component reducing sugars - glucose and galactose. This enzyme is produced by some special cells lining the intestinal walls of humans and forms a kind of chemical barrier known as brush border where foods must pass through before being absorbed. By so doing, foods are screened for the presence of lactose and any lactose is broken down before the foods are given a pass.
