Amphipathic refers to holding property of both water affinity and it's phobia. Thus, amphipathic compound will have structure suitable for both. Same is the condition with lipids. Lipids have hydrophobic tail that are made up of fatty acids. They also have hydrophilic head which is phosphate group. It is polar in nature and hence easily interacts with water.
The two layers of lipid come together to form plasma membrane. Here, the hydrophilic head remains outside while the hydrophilic tails remain inside the bilayer. Both phosphate and fatty acids are attached to glycerol. Other carbohydrates may attach to lipids forming glycolipids, which play different significant roles in functioning of cell.
